Method
Mix the sugar, paprika, salt, cumin, and pepper and rub over the pork.
Place the onion and garlic in a Dutch oven or slow cooker, set the pork on top, and add the stock and vinegar around it.
Cover and cook at 300°F for 6–8 hours, or in a slow cooker on low for 8–10 hours, until the pork pulls apart easily.
Rest briefly, shred, discard excess fat, and moisten with strained cooking juices. Adjust seasoning and acidity.
Notes
For crisp edges, spread portions on a sheet pan and broil just before service.
