Method
Heat the oven to 425°F with the sheet pans inside. Toss the vegetables with oil, salt, pepper, and herbs.
Spread in a single uncrowded layer on the hot pans, keeping quicker-cooking vegetables together.
Roast until browned and tender, turning once, 25–40 minutes depending on the vegetables.
Finish with lemon juice or vinegar and adjust seasoning.
Notes
Crowding causes steaming. Use additional pans or roast in batches when scaling.
