Method
Heat the oven to 350°F and grease or line a loaf pan.
Whisk the bananas, melted butter, sugar, eggs, and vanilla.
Whisk the flour, baking soda, salt, and cinnamon separately, then fold into the banana mixture just until combined. Add nuts or chocolate if desired.
Bake until a tester comes out with a few moist crumbs, 55–65 minutes. Cool in the pan for 10 minutes, then transfer to a rack.
Notes
Very ripe, heavily spotted bananas provide both moisture and flavor. Confirm cottage-food eligibility locally before sale.
