What we checked

• The food-safety rules that apply where this cook works, and which credentials those rules require — a food handler card, a kitchen permit, a cottage-food registration.
• That each of those is on file and hasn't expired. Some are checked against the issuer or a document we review; a few are the cook's own statement with a link to the issuer, marked as self-reported where they're listed.
• We look again when a credential expires, and at least once a year.

What we didn’t

• We don't inspect kitchens, test food, or watch how it's handled — that's the health department's job, and theirs alone.
• We don't check rules that ask for no credential, such as how food is labelled or stored, except where the app itself enforces them.
